Description
Most chamomile sold in India is dust. Broken heads, stems, and whatever came off the sorting table. Ours is whole flowers, which is why the pack looks half empty and weighs so little. Fifty grams of whole chamomile is a lot of chamomile.
There is a little lemongrass in here for lift, because pure chamomile can sit heavy on the tongue. That is the only thing we have added.
What it tastes like
Honey coloured in the cup. Apple sweet, soft, with a faint hay note underneath that tells you the flowers were dried properly. It asks nothing of you.
How to brew it
A heaped tablespoon of flowers in 200ml of water at 95°C. Five minutes, lid on, because the lid is what keeps the aroma in the pot instead of losing it to the kitchen. Do not squeeze the flowers when you strain.
When to drink it
The last hour of the day. Keep the tin by the bed rather than in the kitchen, so making it does not turn into a trip. Then leave the phone in the other room.
